Feijoa Cake
Cake
- 5.3 tbs butter, sofened
- 1 cup sugar
- 1 cup mashed feijoas
- 1/2 cup milk
- 1 tsp baking soda
- 2 eggs, beaten
- 1 tbs vanilla essence
- 2 cups flour
- 1 tsp baking powder
Steps
- Cream butter with sugar, blend in feijoas.
- Heat milk, add baking soda. Add to above mixture, along with egg and vanilla.
- Sift flour and baking powder, mix into wet ingredients.
- Pour into greased, 20 cm cake tin and bake at 356°F for 40 minutes.
Icing
- 200g cream cheese
- 200g icing sugar
- 1 tbs butter
- lemon juice
Steps
- Beat cream cheese until soft, add icing sugar.
- Add lemon and butter, blend until smooth.
