Amita's Recipes
Tarka
- 1 stick butter
- 1 onion, chopped
- 2 green onions chopped (separate green from white)
- 2 tbs Ginger (3 in piece), minced
- 6 cloved garlic, minced
- 2-3 serrano chili minced
- 1 tsp cumin seeds
- 1 tomato, chopped
- 2 tbs canned diced tomatos
- 2 tsp ground tumeric
- 2 tsp ground cumin
- 1 tsp paprika
- 1 tsp salt
- Cook onions and white part of green onions in butter until starts to brown.
- Add ginger, garlic, chili, and cumin seeds.
- Cook until you cannot see garlic. Add green onion tops, both tomatos and masala.
- Cook until golden, add splash of water if dry.
Targa adjustments:
Chicken: 50% more chili and canned tomato, oil replaces butter.
Ground turkey: no canned tomatos, 2/3 * garlic and ginger, oil replaces butter.
Vegetables: cook 1/2 as long, no paprika, no tomatos, thinly slice onion.
Rice
- 2 tbs oil
- 1 onion chopped
- 2 tsp cumin seeds
- 3 cups rice
- 1 cup frozen peas and carrots
- 5.5 cups water (r:w = 1.5 : 2.75)

- Heat oil and cook onions until soft. Add Peas, carrots and cumin seeds.
- Add rice and stir to coat. Add water and bring to boil.
- Stir and reduce to med-high 5-10 minutes with lit tilted.
- When water is gone, fully cover and put on lowest heat for 5 minutes
Lentils
- 1 cup lentils (Moth)
- 6 cups water (for flat lentils on stove)*
- Tarka
- Add Lentils to water and cook 40 minutes
- Add Targa, simmer until thick.
*Round lentil water: 7 cups (stove) or 6 cups (pressure cooker.)
Chicken
- 7 breasts or whole chicken
- Tarka
- 6 cups water
- 1/2 C cream, yogurt or coconut milk
- cilantro
- Sear chicken, add targa.
- Add water and boil for 30-40 minutes.
- Add cream, cook 5 minutes, serve with cilantro.
Ground Turkey
- Tarka
- 1.5 lbs ground turkey
- 1.5 cups peas
- 1 yukon gold potato diced
- cilantro
- Cook turkey until brown. Add targa and stir.
- Add peas and cook for 5 minutes. Add potoato, cook until soft server with cilantro.
Cauliflower (or any vegetables)
- Tarka
- 1 head cauliflower florets halved with stems attached
- 3 yukon gold potatos cut into 6 pieces each
- cilantro
- Cook potatos with tarka, 5-7 minutes, covered.
- Add cauliflower and cook until soft. serve with cilantro
